Healthy pancakes

Ingredients (Double up for 2 people)

  • 100g oats
  • 1 banana
  • 1 heaped tablespoon of flaxseed (optional)
  • 1 egg
  • 1/4 teaspoon of baking powder
  • Sprinkle of cinnamon (optional)
  • Drizzle of vanilla
  • 100ml oat milk
  • Yoghurt
  • Berries for the compote
  • Honey, golden or maple syrup (optional)

Step 1 – Mix together your oats, banana, flaxseed, egg, baking powder, cinnamon, vanilla and oat milk. You want your mixture nice and thick!

Step 2 – Using a non stick frying pan, pour in your mixture and cook your pancakes

Step 3 – While your pancakes are on the go, you can make your compote. Heat a saucepan with your berries (I used strawberries, raspberries and blueberries) and a splash of water, stirring regularly. Approx 10 minutes

Step 4 – Stack your pancakes, add a dollop of yogurt, your berry compote and drizzle over some syrup

Step 5 – ENJOY!
